Lime Crusted Grilled Fish Tacos

I just got back from an amazing trip to Panama!  We were in the jungle in the western part of the country in an area called Cineguita.  We worked all week digging out a basement and pouring in concrete for a dental clinic that was being installed to serve the entire area.  We worked hard and we ate hard!  We had an amazing Panamanian cook/friend who prepared wonderful meals for us all week.  Over the next month I will be sharing some of those recipes, but for now I am sharing a dish inspired by some of the flavors of lime and fish I always encounter in Panama’s amazing ceviche.  I am taking these awesome flavors, combining them with a zesty chili lime sauce, and wrapping it all together with avocado in a warm corn tortilla!  With the arrival of Spring, this is a perfect dish to pull out the grill, have a tropical drink and enjoy the fresh light flavors of Central America! Birmingham Benedict

Bobby Flay says that brunch is his favorite meal of the day because of the many things you can do with it.  I totally agree!!!  Brunch is so versatile!  You can use sweet, savory, fruit, veggies, meat, pastry, you name it and I bet there is a brunch recipe that will include it!  So once again, it is Saturday morning and I want to mix it up a little.  I love Eggs Benedict.  It is an awesome combination of bread, meat, eggs, a creamy sauce and usually some veggies.  I have had some spectacular variations of this brunch mainstay, but never have I had it the way I made it this morning.  So without further ado I give you my very own Birmingham Benedict!!! When in Rome: Nashville Edition

Nashville is a great city to visit!  It is easy to get around, traffic is no where near as bad as other large cities and there are loads of great eats all around the city.  My list below has one caveat, it is primarily centered around the Vanderbilt campus.  I did venture to a highly recommended restaurant called City House and was really excited about the food, but alas the bloody place was closed on Tuesday– who the heck closes on Tuesdays!!!! I will visit it the next time I am in the city, just not on a Tuesday.  So below are my primarily Vandy centered eateries.  I hope you enjoy! Continue reading


Best Ribs in the ‘ham

Dreamland BBQ is a long standing tradition among many outstanding BBQ institutions in the great state of Alabama.  Dreamland can be found in several locations around the state, including in downtown Birmingham.  Dreamland ribs get the Vulcan’s Table Award for Best Ribs in the City.  I have had a long love affair with these southern delicacies, so simple in presentation (served with only a few slices of bread for “soppin'” up the left over sauce) yet so complex in flavor and texture.
