Bobby Flay says that brunch is his favorite meal of the day because of the many things you can do with it. I totally agree!!! Brunch is so versatile! You can use sweet, savory, fruit, veggies, meat, pastry, you name it and I bet there is a brunch recipe that will include it! So once again, it is Saturday morning and I want to mix it up a little. I love Eggs Benedict. It is an awesome combination of bread, meat, eggs, a creamy sauce and usually some veggies. I have had some spectacular variations of this brunch mainstay, but never have I had it the way I made it this morning. So without further ado I give you my very own Birmingham Benedict!!! The Best Breakfast Cups…Ever.
One of the things I love about our family is that we decided a few years ago that breakfast and dinner were going to be priority family times. We eat a full breakfast every morning together before we take the kids to school and go to work, usually consisting of bacon, eggs, bread, coffee and a fruit of some sort. During the week, this is our standard, but when we get to the weekend I like to change it up a little. Using the same ingredients with just a few tweaks I came up with the Best Breakfast Cups! White Breakfast Frittata
Late one night about six years ago, I found myself up and procrastinating on a graduate paper due the next morning,and as usual watching cooking shows. I do not remember what show I was watching but the focus of the episode was the frittata. After watching the show I immediately went to my kitchen, at 1 a.m. remember, and made my first frittata. It was excellent. Not because of anything special I had done but purely the concept and the versatility that it brings. I prefer frittatas over omelets not only for the versatility of the method but I find the tastes to be more defined and the textures more pronounced . I experiment with all sorts of ingredients in frittatas, the White Breakfast Frittata is one of my latest creations. It is not only simple but super tasty. So whether it is 1 a.m. procrastination/study snack or a Saturday morning breakfast treat, the frittata is an excellent alternative to the omelet. Continue reading
